Italian Biscuit Pizza Bake
Ingredients:
2/3 cup biscuit mix
1/4 cup egg beaters (or 2 egg whites)
2 Tbsp water
1/4 tsp garlic powder
1/2 cup diced green or yellow bell pepper
1/2 cup chopped onion
1 cup cooked, chopped chicken
1 can no salt added diced tomatoes, drained
1 tsp Italian seasoning
1/2 cup shredded reduced fat mozzarella cheese
Directions:
Preheat oven to 400 degrees. Spray a 8x8 baking pan with cooking spray.
In a medium bowl, stir biscuit mix, eggs, water, and garlic powder. Spread into loaf pan.
Saute peppers and onions in a nonstick skillet over medium-high heat until onion is tender.
Stir in chicken, tomatoes, and seasoning. Heat until hot. Spoon over batter in pan. Sprinkle with cheese.
Bake 20-23 min or until golden brown. Loosen from sides of pan.
Makes 4 servings.
Variations:
Substitute bell peppers and onions for artichoke hearts, mushrooms, or olives
Substitute chicken for cooked, crumbled ground turkey or chicken
Make it a Hawaiian: Top with thinly sliced ham and pineapple tidbits
