Cauliflower "Potato" Salad
Who says you can't enjoy potato salad on a diet?
4 cups cauliflower florets (1 head)
2 or 3 hard boiled eggs, chopped
1/2 cup cooked, crumbled bacon (optional)
1/4 cup finely chopped red onion, or 3 green onions
1/2 cup finely diced celery
1-2 dill pickles, chopped
1/3 – 1/2 cup light mayonnaise
1 Tbsp prepared mustard (or 1/2 tsp dried mustard)
2 Tbsp lemon juice
1/2 tsp celery seed (optional)
1 - 2 tsp sugar substitute (optional)
salt and pepper to taste
Paprika or dill (for garnish)
Steam cauliflower until tender (or microwave on high for 6 minutes). Pat dry with paper towels and let cool.
Place remaining ingredients into a large bowl (except for the eggs) then stir to blend well.
Add the cauliflower and eggs to the mixture and gently fold until combined.
Chill for 2-3 hours before serving. Sprinkle with paprika or dill right before serving.
