Cheesy Cauliflower Soup
What could be better than a bowl of this hot, creamy soup and with a piece of homemade bread to keep the chill out? Cheesy cauliflower soup is filling enough to eat as a main course, or served as an appetizer.
Ingredients:
1 head cauliflower, cut into florets
2 celery ribs
2 large carrots
1 large green pepper
1 small sweet red pepper
1 medium onion
4 cups (32 oz) low sodium chicken broth
1/2 tsp Worcheshire sauce
1/4 tsp salt
1/8 tsp pepper
2 cups (8 oz) reduced fat cheddar cheese, shredded
2 cups low fat milk
Directions:
Place cauliflower in a 4 quart crockpot. Chop clerey, carrots, peppers, and onions. Add to crockpot. Stir in broth, wocestershire, salt, and peer. Cover and cook on low for 5-6 hours, or until veggies are tender.
In a blender, process soup in batches until smooth. Return to crockpot. Stir in cheese and milk. Cover and cook on high for 30 minutes or until cheese is melted.
