Chinese Chicken Salad
A lighter version of the typical Chinese Chicken Salad
1/4 cup rice vinegar
i Tbsp zero calorie sugar substitute
3 Tbsp light soy sauce
2 Tbsp olive oil
1 tsp sesame oil
1 pkg (14-16 oz) salad greens or shredded cabbage
2 - 3 cups chopped, cooked chicken
2 tsp dried chives
1 large can mandarin oranges, drained (omit while on the 5 & 1 plan)
1/2 cup slivered almonds (omit while on the 5 & 1 plan)
In a small bowl, whisk all ingredients for dressing together. Set aside.
In a large bowl, mix all ingredients for salad together,
Drizzle dressing over salad and toss.
