Chinese Fried "Rice"
A good impression of the traditional take-out!
1 head cauliflower, cooked, cooled, and grated (see note below) - about 4 cups
1 1/2 Tbsp olive oil
1/4 cup onion, minced 1 clove garlic, minced
2 tsp dried chives
1/2 tsp dried ginger
2 Tbsp light soy sauce
1/2 cup egg beaters
1 1/2 - 2 cups finely chopped cooked chicken or pork
Non-stick cooking spray
Heat oil in a large skillet. Saute onion and garlic 30 seconds. Add cauliflower. Stir fry 4-5 minutes. Stir in soy sauce and ginger. Push mixture aside. Spray skillet with non-stick cooking spray. Pour eggs and scramble until cooked through. Mix with rice. Stir in meat until warmed through.
NOTE: To grate cauliflower, use a salad shooter, blender, food processor, or cheese grater until it resembles "rice".
