Cranberry Citrus Minis
Ingredients:
1 can (20 oz) crushed pineapple, undrained
2 pkg (3 oz each) sugar free raspberry jello
1 can (16 oz) whole berry cranberry sauce
1 can mandarin oranges, drained and chopped
2/3 c copped walnuts (optional)
1 apple, chopped
Directions:
Drain pineapple, reserving the juice. Add enough water to juice to measure 2 1/2 cups. Pour into saucepan. Bring to a boil.
Empty jello packages into a large bowl. Pour pineapple juice mixture over gelatin. Stir 2 minutes until completely dissolved. Stir in remaining ingredients.
Spoon into 24 paper-lined muffin cups.
Refrigerate 2 1/2 hours or until firm. Remove liners before serving.
