Cucumber Confetti Salad
1 cucumber (peeled and diced)
1 can black beans (rinsed)
2-3 cups chopped tomatoes
3-4 Tbl dried chives (or 1 red onion - diced)
1 1/2 cup cooked corn (or 1 can, or 2 ears)
4 tsp dried cilantro
3-4 Tbl lime juice
2 tablespoons olive oil
1/2 - 1 tsp sugar
salt and pepper to taste
Mix all of the ingredients into a bowl and toss.
NOTE: Omit corn and onion on the 5&1 plan
Substitute a diced green pepper instead of the onion.
