Lemon-Sautéed Green Beans with Parsley
1/2 Tbsp olive oil
4 - 5 cups cut green beans (2″ pieces)
3 Tbsp chopped fresh parsley
1 1/2 Tbsp fresh lemon juice
In a large nonstick skillet, heat oil over medium-high heat; add beans. Sauté 3 minutes until beans are bright green, stirring frequently. Add parsley. Cook another 3 minutes, stirring frequently. Add lemon juice and 2 tablespoons water; mix well. Reduce heat to medium, cook, covered, 2-3 minutes. Uncover, cook, stirring frequently 2-3 minutes longer, until beans are tender-crisp.
