Malt-O-Meal Magic Muffins
Ingredients:
3/4 cup whole wheat flour
1/2 cups all-purpose flour
3/4 cup Original Malt-O-Meal wheat cereal, dry
1/2 cup sugar substitute
3/4 cup milk
1/4 cup oil
1 egg
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
Directions:
Preheat oven to 400. In a large mixing bowl combine all ingredients. Stir together until all ingredients are moistened. Pour batter into greased or paper-lined muffin pans, filling cups 3/4 full. Bake 18 to 20 minutes or until center is firm to the touch.
Yield: 10 - 12 muffins
Variations:
Healthier version: Substitute no sugar added applesauce for sugar, increase milk to 1 cup, and decrease oil to 2 Tbsp
Mini Magic Muffins: Use a mini muffin pan, and decrease baking time to 12-14 minutes
Banana Muffins: Add 3/4 cup mashed bananas
Berry Muffins: Add 3/4 cup blueberries (or other favorite berry)
Chocolate Chip Muffins: Add 3/4 cup mini chocolate chips
Double Chocolate Muffins: Use Chocolate flavored Malt-O-Meal instead of the original, and add 3/4 cup mini chocolate chips
Cranberry Almond Muffins: Substitute 1/2 tsp almond for the vanilla, and add 3/4 cup dried cranberries
Cinnamon Raisin Muffins: Add 3/4 cup raisins and 1/2 tsp cinnamon (or to taste)
Apple Cinnamon Muffins: Add 3/4 cup chopped apples and 1/2 tsp cinnamon (or to taste)
Cinnamon Streusel Muffins: Sprinkle tops with streusel topping before baking. For topping, mix together 1/2 c. brown sugar, 2 tbsp. soft butter, 1 tsp. cinnamon
Breakfast Muffins: Add 3/4 cup cheddar cheese and 1/2 cup cooked, crumbled bacon
Magic Corn Bread: Add one 8.5-ounce can cream style corn
Magic Muffin Bread: Pour muffin mixture into a greased 13×9-inch pan and bake for 19 to 20 minutes
Magic Muffin Buffet: Mix and match different types of muffins (some berries, some with chocolate chips, some with cinnamon sugar, etc) – then you can have a few different ones for breakfast
