Sun-Dried Tomato Chicken
4 boneless, skinless chicken breasts (or 24 oz chicken)
3 oz (1 pkg) sun-dried tomatoes (not packed in oil)
1/2 tsp dried basil
2 cups sliced mushrooms
1 onion, chopped
2 oz can sliced black olives, drained
1/2 cup chicken broth (reduced sodium)
Preheat oven to 350 degrees.
Place chicken in a 13X9 baking dish.
Slice tomatoes into julienne strips (or smaller). Place in medium sized bowl and add remaining ingredients. Spoon over chicken. Add broth.
Bake 40-45 minutes or until done.
