Broccoli Salad
This is a wonderful chilled salad that can be enjoyed on a warm summer's day.
Ingredients:
4 cups broccoli florets
1 onion, chopped (preferably red)
6 Tbsp vinegar
2 1/2 Tbsp olive oil
2 Tbsp lemon pepper (I use Mrs. Dash)
2 Tbsp zero calorie sugar substitute
1/2 slivered almonds (omit while on the 5 & 1 plan)
Directions:
Steam broccoli until tender.
In a small bowl, combine onion, vinegar, oil, lemon pepper, and sugar substitute. Toss with broccoli and almonds. Chill in fridge for 3 hours.
