Superbowl Shrimp
My TSFL Health coach made these at a superbowl party, and they were delicious!
Ingredients:
1 lb cooked, peeled, deveined medium cocktail shrimp (from frozen), thawed
2 Tbsp olive oil2 Tbsp lime juice
1/2 - 1 tsp red pepper flakes
1/4 tsp dried rosemary
1 tsp dried chives
salt/pepper
Directions:
Preheat large electric to 400 degrees.
In a small bowl, whisk together oil, lime, and rosemary.
Place shrimp in a shallow baking dish. Sprinkle with salt and pepper. Pour marinade over shrimp. Toss. Let set 2-3 minutes.
Remove shrimp from marinade with a slotted spoon, and place in preheated skillet. Cook shrimp 1 - 1 1/2 minutes on each side. They are done when they turn pink and begin to curl. Sprinkle with chives.
