Whole Wheat Pancake Mix
With this mix on hand, you can enjoy homemade pancakes on busy weekday mornings.
3 cups whole wheat flour
2 cups whole wheat pastry flour
1 1/4 cup fat free powdered milk
1/2 cup Splenda
2 Tbsp baking powder
1 Tbsp baking soda
Mix all ingredients, and store in an airtight container. Can be stored up to six months.
Yield: Approx 6 1/2 cups (about 4 batches)
To make pancakes:
1 1/2 cups pancake mix
1 cup water
2 Tbsp oil
1 tsp vanilla extract
Directions: Whisk together in a large bowl. Cook pancakes as usual on hot skillet sprayed with cooking spray.
Yield: 6-8 pancakes per batch
